I began a NG+ this morning and had the same question. He definitely didn't dodge, and it's never explained in the game (I think ?). Maybe Sciel saved him before being separated from the group ? Or maybe Verso did ? Although it's rather unlikely considering what he did after.

even when we in NG+ there are still many questionmarks in our head
There are only two plausible explanations;
  • He simply got lucky
  • Or The Curator intervened at the very last moment, because we know he was there to ensure Maelle doesn't get hurt and probably saw Gustave caring for her, so it was merely a courtesy.

First time we play the game we don't really understand how he survived the attack from the "two handed Nevron".

But after finishing the game and doing side content we meet Blanche, the "leader" of the White Nevrons (the kind ones we crossed and helped during the journey).

She explained she can't fufill her mission (kill the unfinished / incomplete creations / Nevrons) because they "came from the same brush" (aka they have being painted by the Paintress) and instead, she protects / helps the "incomplete Nevrons" (the White ones that have missing items, parts, etc.).

That's why if we helped ourself all the White Nevrons during our journey, she gives us 100 Lumina points.

So with that we understand that in the Landing, the Two Handed Nevron is Blanche, she looked at Gustave's body and saw his missing arm and protected him as he looks like an "incomplete" one too. Plus people from Lumière are creations from the Paintress too, so they came from the "same brush" as Blanche etc.

The spell she cast on us is more of a "teleportation spell" / something to push us far from the battleground 'cause if she wanted to kill us, she only had to destroy our body with her bare hands at this point of the game.

It can't be Verso 'cause meanwhile he is rescuing Maelle, and Esquie would have talked about it during a cutscene in the firecamp as he cant "keep a secret" or stop talking.

Yes, I just saw right now my "updated" spoiler section has not been published / has not remplaced after my correction, I dont know why...

As I (try) to change a few hours ago ; Clea created the Nevrons except the ones on the Axon Island, but Blanche's motivations remain the same, helping "incomplete / broken" Nevrons.

"Painted by the same brush. Cut from the same cloth"

That's why she gives us 100 Lumina points if we helped the White Ones or fight us if we killed 6 or more of them during the journey.
I've just started playing the game again, recorded a piece of gameplay on the PS5, and I can clearly see the impact of. She hits Gustav with an attack like they usually do. Unfortunately, I can't slow down the playback speed, but I can clearly see that the projectile hit it.
