My first playthrough I barely parried anything. Some attacks are easier to parry than others, such as Eveque "casts a spell" and "unleashes ultimate power". Very easy to garner the parry window on. As well as Bourgeons acid spit, I opted to parry that.
Now I am on a single character playthrough, where parrying and dodging is essential. I still opt to dodge attacks I absolutely suck at parrying. 50% of the time I see a "dodge", not a "perfect" when I dodge those attacks, so that's definitely what I should aim for. Avoiding damage is essential, dealing damage happens whether or not you parry, as you also have turns to deal damage.
EDIT: Older games I enjoyed the damn ♥♥♥♥ out of I've played hard modes of as well, hence me doing the self-imposed challenge of a single character playthrough.
