Lune says something like that too. I think it's just a hint about what Nevrons are made of.

Funny thing is that I ignored those phrases (even Lune, and maybe others, reference it as well), then I told myself "Hey, they never mention blood! Do they even have blood?" But then later on it does appear that they do have blood. Only thing that makes sense is that there is a bit of common knowledge about Nevrons in Lumiere, and that they simply have ink instead.

Didn't bother me at all. While I did notice Maelle saying that quite early, my brain just connected the phrase to the fact we're dealing with Paintress, so it essentially didn't really matter.

It’s less spoiler and more symbolic seasoning, and feels only potent in retrospect.

I don't see how this spoils anything. First you are fighting the paintress who paints with ink so it fits the context. But even when you do realize later on it's just a nice subtle benefit of knowing when it clicks.

They are under the impression that Paintress created Nevron so yeah ink means blood cause you know she painted them

Well, she is called the paintress. Her name made me think she created the nevrons, and doing so by painting them. So it never really crossed my mind. So basically just a spoiled in hindsight.

Pretty much the first expedition diary you find talks about slaughtering Nevrons being "an inkbath". The phrasing has obviously been used for decades ingame. Considering that you are surrounded by painting/art vocabulary, it really only stands out in retrospect.
