Just adding that NG+ replaces the current save.
New slots are available when selecting a new game in the main menu.

You can definitely make a new game I have three, and tbh it's more fun than ng+ which can be a meaningless victory lap depending on your endgame stats.

At least you experience some resistance up until act 3.
