You press parry when they begin moving after the stop.
I'm finalizing act3 stuff, so I'm describing my own experience here. Just like with parry or dodge, some people will find things more difficult than others.
Once I've adapted to Gradients in the beginning, I started praying to see them more, but as it's been said, they're unfortunately infrequent.
The only gradient I've hated so far is Renoir's and that's because it took me forever to realize it was a gradient attack in the first place. I kept trying to dodge it regularly for the longest time -_-
