How often do enemies do gradient attacks?
I've just encountered this in game mechanic and 9/10 times I mess it up and end up taking collossal amounts of damage. this is so annoying.

Fairly infrequently. Every boss after will typically have one of them. Normal enemies, pretty rare. Good news is that they tend to be much much eaiser to avoid than every other attack.
This is the timing for all gradient attacks. Screen turns black/white, then begin their attack animation and gradually slow down to a stop, then they start moving again and hit you.

You press parry when they begin moving after the stop.

The gradient attack parry window is -much- more generous than normal parry, and probably even more generous than the dodge windows.
Gradients are rather easy once you figure out when to press the button. As somebody said already, just as the freeze-frame starts the motion, you press it. There is a room for error too, and it's certainly wider than dodge or even parry.

Only the first half of them work this easily. Later on, you must study when to actually hit W. Especially against Clair/Obscur.

I'm finalizing act3 stuff, so I'm describing my own experience here. Just like with parry or dodge, some people will find things more difficult than others.
Once I've adapted to Gradients in the beginning, I started praying to see them more, but as it's been said, they're unfortunately infrequent.

They're pretty rare. Also remember the timing isn't when the screen goes monochrome but when the attack would land like normal, just needs a different button press.

I wouldn't say gradient attacks are that rare. They're generally easier to do than regular dodges besides maybe the gotcha ones that randomly pop up in a string. At first, you can just press dodge when the start moving again after doing their freeze-frame, but that stops being reliable the further on in the game you get.

The only gradient I've hated so far is Renoir's and that's because it took me forever to realize it was a gradient attack in the first place. I kept trying to dodge it regularly for the longest time -_-
