Do I miss something basic or how can you interact with those little dudes that fly away as soon you come close to them?

If you mean the round dudes with a sphere core, theres a mark on the floor, usually the same color as the core. Chase them to that and they will stop running so you can fight them.

Fly away? Are you talking about the metal balls (Pétank) that run away from you? There are some kind of "docking stations" for those always near by (later the station can be a bit further away), you need to move them towards that, once they are in their docking station you can engage them in combat. Scout the environment to see where the docking station is, then drive the ball towards that, they will always move in the opposite direction that you approach them in, use this to send them where they need to be.
