Spoiler warning: Question about the numbers
I've finished the main quest of the game, and am currently beginning to do the endgame quests.

Do NOT read further if you're not done with the game!

If ever any of my questions are going to be answered via endgame quests, please don't answer :)

My main question remains: Why did the paintress paint the numbers top down, and what would have happened to her at 1 or 0, or if the canvas' society collapsed before?

The explination I understood is that Renoir would have killed off everybody in an instant, and the mother warns them by putting a number on the monolith.

But what's very unclear to me is why is her power allowing her to save/warn people by AGE only. As they are literally omnipotent in the canvas, as soon as they guard and maintain their chroma, there shouldn't be a power imbalance.

Also: How does Renoir "steal" her chroma to maintain his superiority, and why isn't there any real competition between them (unless you'd count the expeditions as such, even though to an ill end)?

This brings me back to the question: What would have happened at 0 or 1 ? Would she have to leave the canvas eventually? Even so, the entirety of the canvas' population would collapse with children under 18 fairly quickly. As she tries to save "everybody" by warning them, this is quite a conundrum to me.

Not sure if this is considered an unwanted answer, but I think you'll find the answer to your questions in the endless tower.

As for the information available outside of the Endless Tower, a rough explanation is given in the story outside of the picture during chapters 2 and 3.
In addition to this, the fountain area, which becomes reachable in Chapter 3, explains the means by which the eldest daughter intervened to upset the balance of power between father and mother.
