Force borderless with launch options on steam like this "-popupwindow" should solve the problem for you.
Sadge not sure what the problem might be then. Sorry I couldn't help just sounded like the issue I had. My res was also greyed out and couldn't change it.

Exactly the same issue for me at 7680x2160.
Users/YourName/AppData/Local/Sandfall/Saved/Config/Windows
You'll see a file called GameUserSettings open it with notepad and check the following lines
bUseDynamicResolution=False
ResolutionSizeX=2560
ResolutionSizeY=1440
LastUserConfirmedResolutionSizeX=2560
LastUserConfirmedResolutionSizeY=1440
WindowPosX=0
WindowPosY=0
FullscreenMode=2
LastConfirmedFullscreenMode=2
Adjust the resolution to what you want it to be. FullscreenMode 2 is windowed mode (remember I also have borderless launch option) once you're done click on file and save. To avoid the game trying to change anything after this you can also go into properties for the file and lock it to read only.
Edit: If you can't see AppData check the option to show hidden files. 3 dots at the top - options - view - show hidden files / folders / drives - apply - ok.
