it varies depending on the area, it changes to white once you're "suitable" level, although some of them don't even have a fight in them so it's a bit misleading at times
Try to enter when you remove the limitation of 9999 damage per hit.

And sometimes (at least once so far what ive found) the area is not marked as dangerous and yet the boss there is close to impossible.

I don't remember the name of the boss or place, but its the one near end of the act 1 optional dungeon who is rock giant with crystals on its back that changes elements as the fight goes. Now ofc everything is easy if you just parry everything, but if you miss here you get one shotted regardless of your hp and defence at least in hard mode. Assuming you are the level you are supposed to be when you unlocked this place.

Ah which reminded me that there is also one other boss not marked as dangerous but it will also one shot you, even in easy mode, also in act 1. The one in the cave who insta kills you with closing in walls if you don't kill it fast enough, which was quite hard at that level

There is lots of that kind of bosses, even roaming open world.

Oh him! I know which one you're talking about. If you don't know the trick to beating him you will be there all damn day getting wiped and trying to understand why you're doing literally 0 damage. There's also an enemy in the overworld thats a bit of a pain if you're not good at parrying/dodging

All of them have fights in them as far as I can remember, its just that you need to do some puzzle or need to do something for an unlock

It might have been opened immediately after reaching act 2, or at the very end of the act 1. I don't remember anymore.
I think the yellow harvest area showed as red, but unless you're terrible at the game/never explored, you can actually complete it once you have access. Though the chromatic hidden enemies may be too hard for you at that point.
