You need to collect all the things all over again, journals, records, lost Gestrals, you do keep all the skill points, all pictos, all luminas, all weapons, the outfits and haircuts and you even have access to ALL team members (even if they are not acknowledged in cutscenes of course).

You also lose the ability to shatter those chroma rocks.
