Yeah some stuff in game has no thought put into it. There is no actual way to hurt it and its attacks cant be dodged.

All chromatic are endgame content. Observe its main attack element (will be its main resistance) and prepare your party accordingly.

Make sure to have acquired and "learnt" the picto that unlocks damage greater than 9,999 and spend lumina points on it for all party. There are other pictos the forces you to play in a row after lowering a given amount of health (Cheater, I guess) or other conditions. Also, Death Bomb and many other pictos will buff your party on taking hits.

I mean, not all of them are endgame. I have cleared two I think and only just reached the village. And they weren't that hard, so they seemed to be meant for my level.

Unlike the chief who is an absolute nightmare. That probably isn't meant for my level. But Imma keep trying.

Chromatic enemies aren't all endgame, just higher level than the rest of their area. Chromatic Luster is very punishing but not that hard. If you can beat regular lusters you can beat it.

Skill issue. Press the dodge or parry button when you see its limbs flash.

I think the luster is the bozo you gotta shoot the crystal a lot to negate his DR
