I suck at these kinds of minigames, and it took me a couple dozen tries or so to beat the hardest one, which isn't so bad really. If I could give any tips, it really helped me to know that it's actually a bad idea to hug the top of the raft. If you're against the "wall", the game sometimes doesn't register you turning diagonally to hit the gestrals coming from the sides, and you end up shooting a sideways attack instead that whiffs. Also, if you know you're going to miss a gestral, it's better to just let it hit you than try, since that can create a cooldown where you're unable to hit the next gestral either.
You can sometimes get lucky and he'll just keep spamming attacks from the same direction, which helps.
The beach minigames give swimsuit outfits for your characters.

I find it personally amusing that the character with the skimpiest swimsuit is Monoco.
