Yeah I have read a lot about it being 'a rhythm based' thing, have played a bit of the game and it's really good so far. Just going to hold off playing the rest until they put out a patch to make the parry timing visually easier to read. Hopefully they will add a symbol that pops up during the parry windows or something to that effect (maybe a glow effect that pops up on the enemy?)
Animation-wise it's a joke as some enemies will 'wind up' their attack multiple times before actually hitting you so you go to parry at the beginning of the first 'attack' but no they were just stretching their arms and it's the second one that hits you and for some animations the parry timing is actually at the end of the attack rather than the start of the attack it's kinda all over the place.
The usual nobrain response here is 'get good by practising over and over against each boss type' as a defense for how hard it is to read these things visually without failing multiple times over & over. The game is great and they just have to do a few small tweaks to improve it and we're gold.
