Sometimes you parry at early attack wind up, sometimes during it, sometimes when it's almost finished, depending on an attack. But after you learn them (from 0 for every other boss) you start feel the flow without thinking much.
Game is die to learn, like it or not, but you definitely can parry everything after you learnt. And it's very satisfying to do so. How long to learn - depends on a person, any time is fine as long as you don't give up if you wanna do it. There are many builds that don't rely on parry as well.
