It is more like others don't look 32 years old. You may say Gustav looks like a 30-year old but it still will be a huge stretch. Sciel and the other girl look in their early twenties, 24-25 max.

There is a dialog scene where one asks her age, her answer is... 16.
At Lumière she told Gustave that she still had 9 years to live before gommage.
33 (the current gommage) - 9 years = 25 (her gommage) - 1 (the time for her to go on expedition). 16 + 9 = 25. -

The number you see on the pillar is the age for an individual's gommage, Sophie is 33, the moment that number ticked down to 33, she died.

So the number on the pillar ticks down, and Maelle's age ticks up, do you understand now?

Oh I actually thought Sophie was 34 and it wiped out everyone 34 and 33 was the next year's target. I was also under the impression there was a age and training threshold, I guess it's just a free for all.
