is it worth learning how to parry instead of dodging?

Absolutely. Unlike dodging, each hit that gets parried grants you +1AP and if you parry all hits the party triggers an automatic counter that deals massive damage.

Dodging is safer, but parrying is significantly more rewarding.

Yes. You counter with big damage.
yes, parry returns damage, dodge doesn't.
Dodge is basically training to get parry timing right as "perfect dodge" and "parry" are the same time frame. if you see you can perfect dodge an enemy's attack consistently, just parry instead of dodge.

Yeah, perfect parrying does a huge amount of damage and helps you end the fights more quickly. It's also extremely satisfying.
Parry= AP per parry and if you parry the entire chain, it's a counter attack.
Dodge= safety.
Perfect dodge= safety with the same time as parry so why would you do this instead? You can get AP with dodges, but it requires a picto.
well I think it really depends, if you have enough hp or your build is tanky then you'd want to parry more since you'll still have hp to spare even when you mess up the timing. If you're not at full hp or near dying, or your build is like a glass cannon or something, or you're against some kind of attack that hits really hard and has very small window for parrying, and could possibly one shot you, you would probably want to dodge it.
