I don't understand how to beat him even on Story difficulty. This is the supposed difficulty for old people like me who can't "git gud" yet he one-shot my guys if I don't dodge his series. I thought nothing can one-shot you on Story? So what gives?

You can still be one shot on story mode. He's an optional boss. Learn his patterns or circle back later on when you're stronger.
I play on Normal and he smacked me easily, so I went elsewhere, leveled up and then smacked him.
Just go do other stuff and come back when you're stronger and more confident.
Wait chromatic troubadour is one shotting people on story mode too? I thought it was just expert mode the optional bosses do that. I kinda get it now why casual players are complaining about the QTE and parries/dodging if that is really the case.

edit: Anyway a tldr to beat him, dodge his swipe and parry the projectiles then parry his overhead smashes.

He's easy to learn, he literally only has two moves that can be parried, and you will need to parry if you want to do damage.

All the Chromatic enemies are optional bosses, which are intentionally tough, and much harder than main story content in the areas they appear in.

You can always come back later when you are stronger.

For the trick shot: He kicks you...
The trickshot is the toughest to dodge until you learn about projectiles. When he does the trickshot after the first attack look at the projectiles to dodge. (for some reason I was not seeing them lol)

This. Skip him for now and come back later. It's ok if you can't beat him, you're not supposed to.

I won't spoil anything, but there's a particular optional boss who has 2 attacks. One of which I can reliably parry 100% and the other I can only dodge (not even perfect dodge), despite me dodging at the last possible moment. I'm fairly certain the devs are going to patch the parry/dodge windows for certain enemies and bosses, as in some cases those are incredibly unreliable.

Whether we like it or not (I sometimes do not, to be honest) this is a game about dodging and parrying. To do that you have to either die repeatedly (as was the case for me on Normal with this particular boss) or tank hits if you can, while trying to dodge to learn the frames. Even so, there ARE wonky animations (or rather hitboxes) on certain attacks, despite some people claiming that everything is perfect and you have to GIT GUD. I mean, you DO have to GIT GEWD, but that doesn't cancel out the fact that some attacks are janky and parrying/dodging them reliably is absurdly difficult, especially for some.

Anyway, TL;DR for this one: die a few times learning the attacks, them dodge or parry if you're feeling confident enough. No other way except for skipping the encounter entirely for now and coming back later once you've leveled.

If I come later, I will still not be able to dodge or parry.

Use Dodge: Get damaged.
Use Parry: Get damaged.

How to know exactly when to hit the buttons?

Edit: It looks like the enemy is not using melee attacks and instead the damage comes from flying projectiles, aka sparks.

Every enemy attack has an audio que to when you need to dodge/parry. The troubadour has only 2 attacks:

1) he blows his horn and sends out 2 green balls into the air, he then kicks you as the first attack to confuse you while the balls land on you. parry/dodge the first kick then parry/dodge the falling green bubbles.

2) the 2nd attack is just a 3 hit combo

and thats it, thats the whole fight
Its timings are ass to be honest, the animations don't sync up with when the damage happens. I mean most enemies have janky weird animations but this one is blantantly like "yeah toot toot I touched you maybe".

So either try and fight him when the game logically introduces him to you with no indication that he is "optional" and get clapped, or come back later when you are leveled up and he is zero challenge at all. Neither of those sound very fun, so what's the point even?
