each difficulty raises or lowers the timing window apparently, so there's an easy mode where timing is easier and also damage is lowered in case you do miss
yes there are on screen prompts for attacks, for defence you need to learn the enemies patterns on when the attack lands, it takes a while as sometimes it looks like theyre about to hit but its just part of the wind up animation
You honestly probably would need to turn it down to easy at some point as well, and even then you should probably avoid the numerous "Chromatic" optional bosses as they require a lot of precision and are far harder than main story content.
