What accessibility options does the game have?
I WANT this game; however, I have nerve damage in my hands, so my response times aren't great. I do like to try to play a game through on "Normal", though. If I struggle, what options does the game offer, other than just a flat "turn the difficulty down"?

Wow... widespread complaints about parry/dodge and 25-20 incels whining about "woke" pushed this unseen to page SIX in less than an hour.
Auto QTE for example is great.

You can set attacks to auto-QTE, but not defense. Which... is utter nonsense. A pathetic half-measure.

Is there a way to make the action window of a QTE a little wider? Like, give them a little more room for error?
And are there on-screen prompts?
Attack qtes have prompts. For defense you'll have to watch / hear what is being telegraphed. It's not a spamfest in any way.
If you're not adverse to cheating there is Wemod which you can lower the damage you receive so you could kind of balance it out without having to worry about dodging or parrying.

each difficulty raises or lowers the timing window apparently, so there's an easy mode where timing is easier and also damage is lowered in case you do miss

yes there are on screen prompts for attacks, for defence you need to learn the enemies patterns on when the attack lands, it takes a while as sometimes it looks like theyre about to hit but its just part of the wind up animation

You can turn on auto-QTEs for the offense inputs, but defensive timing elements can't be made automatic, so you would need to pump defense and vitality stats (also use weapons which scale with these stats), and make good use of healing, tanking skills later on, etc.

You honestly probably would need to turn it down to easy at some point as well, and even then you should probably avoid the numerous "Chromatic" optional bosses as they require a lot of precision and are far harder than main story content.

Auto parry would mean you couldn't die.
