You're supposed to come back later, I came across another boss but didn't bother with it cause it was just me and Luna. But I would assume it is actually possible to take them down if you played well, the first mine you come across on the continent I was able to take down his shield but kept dying because Gustave and Luna still had beginner stuff.

Yes take them out as you find them. They will not take much damage until you break their shielding. Use Gustavs Overdrive to break the shield or other skills with break in description. Once shield is broken they take normal damage.

Gustav’s max charged special attack and then applying burn is what makes them much easier.
Also lot of HP and healing spells to not worry about received damage too much. Glass cannons don’t work well here.
