A very important note here is that how you perceive the parry timing can vary greatly depending on how responsive your input device is. For example I usually game on a keyboard with a 0.1mm actuation depth, meaning that the input is pretty much instant as soon as I begin pressing the key. If I change to a more normal 2mm actuation depth then I effectively have to parry sooner because my input gets delayed by the time it takes me to push the key that additional 1.9mm. That actually makes parrying feel more intuitive since I am now actually parrying before the attack lands rather than afterwards. The same goes for a controller, that also feels a bit easier, and if you're playing on a TV then that can also add some latency.
Also worth noting is that Gustave's Overcharge is by far the strongest offensive skill in this fight, at least if you do it on level 3 (expert) like I did. If you start off with Assault and do Overcharge asap then after that it should be very nearly defeated. It probably took me 10-15 attempts. My successful attempt went like this:
turn 1 (Gustave): Aim + Assault
turn 2 (Lune): Immolation
turn 3: Gustave parry 2x
turn 4 (Gustave): Overcharge
turn 5: Gustave failed parry and killed
turn 6 (Lune): Ice Lance
turn 7: Lune parry 1x
turn 8 (Lune): Immolation
turn 9: Lune parry 1x
turn 10 (Line): Immolation, victory
In total that was 4 successful parries to win, and Gustave even died, so it's not a very long fight.
Because a successful parry gives you AP and deals a lot of counterattack damage. If you don't parry then the fight becomes longer, so although it's slightly easier you need to do it many more times.
And because I'm stubborn. Not parrying feels like the easy way out, and I am playing on expert for the challenge.
