I just started playing this game, and i always start with Gustave in combat, is there a way to swap to i start with Lune on first turn instead?

Use "First Strike" Pictos. Or increase Agility.

It's speed & agi based, you could get it high enough to go 5 times before anyone else goes once if you want, there is no selection box for it. (Unless you have first strike on both of them, you just re-arrange party members)

There is, remove Gustave from the Party and add him again, Lune will start to play before him
