Do make sure to avoid ALL side content in Act 3 though until after you do the main story bit. It's supposed to be post game content.
Maybe you are thinking of a different game, as I am not familiar with all of the dark souls. However in elden ring I have hundreds of hours and gravity rod and gravitas I am not familiar with. There are a ton of greatswords and the regular one is gotten super early but isn't overpowered. In ER, people will complain about Blasphemous blade being OP along with darkmoon greatsword, and some of the other God's weapons.
As for this thread, people overly exaggerate game skills in almost every game in difficult games; whether it's Sekiro, Sifu, Elden Ring, Lies of P, Expedition 33 etc. There are some gamers that are incredibly good at games and it would also be true they would be the one's to post on forums as well. It's a HUGE hobby but a niche hobby at the enthusiast levels.
Maybe the OP is just an amazing gamer and doesn't get the fact that their skills are outliers compared to most people. Perhaps they are just stirring the pot. Who knows but the game isn't a breeze IF people actually play without looking up everything which is common in today's gamers with streaming and streamers. If people don't obsess over min and maxing, they wouldnt know what path to take and what to upgrade or not, what character to use or not, how limited the resources can be, etc. It's very easy to have a regular playthrough on default difficulty and be thoroughly challenged.
As for the fight with Simon, I think it is not a very good fight. Because he removes dead party members, it is hard to learn his attack patterns, the fight is simply too short. And then you have to go through his first phase again to start the proper second one.
The optional fights throughout the game are fun and difficult, but if you do them then you become very overpowered for the story content.
I've been watching a stream of someone who's not very good at the game just to see what abilities the bosses have.
