Check your PC diagnostics, maybe something is wrong with it if it's updated.
Also, try verifying or reinstalling the game if you still have issues. Does this happen on every game?

I've been reading about unreal engine and GPU going over 100% usage causing issues.

Change to Fullscreen and native resolution of your monitor (Fullscreen borderless had PC Shutdown)
Change to XeSS Quality (Ultra Quality+ was where I had PC Shutdown)
Framerate unlimited (capped at 60 I had PC shutdown), VSYNC Disabled.
Set Shadows, Reflection, and Shading to Medium. Everything else is on High.
Bonus, I was able to re-enable post process effects except motion blurr because I do not like it, but motion blurr did not cause an issue if you do like it.
No AMD Adrenline/Control Panel tweaks whatsoever.
Haven't had PC Shutdowns since. UE5 Optimization Mod, Fullscreen, XeSS Quality, and a few settings on medium seemed to do the trick. I average 70-85 FPS, maybe 60-65 during some battles. Played for 4 hours in high demand areas, ran like a charm!
Here's a thread I found online I sent to a friend and it managed to help his crashing issues. Hopefully it helps you out too.
Other than that, use system file checker commands in admin terminal, and also DISM fixes (Google it). These very often help me when I run into issues with a game crashing. Also, reinstalling chip set and GPU drivers can sometimes solve issues.
Do lowest settings, lowest resolution and 30fps cap. If it’s any more stable then it may give you an idea where to look.
But it does sound like a hardware issue.
