How exactly do you deal with damage sponging?
I just cant deal enough dmg to make fights reasonably long. Mime for example at rate of DMG would take over a hour just due to how low my dmg is in new game+. The attacks often are under 1000 dmg or under 500.

Imagine running a NG+ without a "auto-death + breaking death + second chance" character.
Definitely a bait.
For mimes make sure you've got all the break damage increase lumina equipped. How much lumina do your characters have? I think you want something like 150+ on each character when starting NG+

I also have doubts the OP is playing on NG+; by the time you get to NG+, you should be able to easily overpower most enemies in Acts 1 and 2, including Mimes. I nuked, dodged, shielded most of my way through much of NG+ for the challenge. But had to switch to auto-death breaking (and Litheson) when I got to Renoir's Drift and Simon.

OP: assuming you're on the normal game, just do as suggested and auto-death break them. And seriously increase the damage of whoever is your nuker (usually Maelle using last chance) and use Sciel to manage the action economy.

I genrally havent been using break due to base dmg/hit counts.

You seem to overestimate knowledge needed to beat game. I forgot jump parrys like 5 times (existing).

I guess that it then i was hoping attributes would be enough. Is it just that mime and few others are deisgned around break dmg rather than attack dmg?

The mimes cant delete my squad its just raw dmg too low takes too damn long.
OP is the kind of gamer who needs tutorials and hints for everything despite the game making it obvious that the mimes put up a wall you need to break.

The mimes are explicitly designed around break damage, they have massive damage reduction until they are broken, so going straight for break is the move. Other enemies (like Petank) have similar mechanics where you can't hurt them very well unless you do specific things.

This is counter intuitive since i wouldnt remember tutroials and would ignore hints. I ignore text im looking directly at sometimes. Also do you mean it has some sort of break bar and wall represents that as my logical assumption was it meant armor or shield whatever its called in this. Of top of my head i cant remember if they have armor/shield I honestly dont know. I was being as literal as possible about how little you can know playing game at ng+. I know it sounds ridiculous but I got to paintress on first run and said to myself i have no idea whats going on. (With combat) i still won but i probably understand like 50% of combat at best.

Im actually debating new save i will probably pick up on what i missed.

I don't know how you guys are doing it. I use all the luminae, pictos, and break skills I can. ONE break attack WITH the skills attached to said character add one 1/64th of the bar at a time. It's insufferable.
