Maelle's ending question *spoilers*
Did verso really grew old? Or he just didn't dye his hair? (which at this point it was naturally white) We get a hint from Maelle's quote that he might grew old ("if you could grow old, would you still find a reason to smile?"), but if that's the case it means that everyone else stopped aging because they look exactly the same as we left them. Lumiere also looks like a mess which might also mean that Maelle didn't restore it yet which is weird, if years have passed and she didn't bother to do it

She did restore Lumire but to the state it was she known as Maelle.
She does not know how the original Lumiere looked so she cant restore that.
What she brought back is the version she knows from her life as Maelle.

And yes, the implication is that Maelle removed painted Verso´s immortality and he now can grow old and die.
And i dont think that much time has passed, maybe a couple of years in the canvas, Verso just stopped dying his hair like you wrote, it was always white beneath.

She just painted herself a new Verso, it's not the one we play as (that got erased).

Ι dont think thats the case. People who gommaged (or reduced to petals in general) release their chroma which is essentially their life essense, and a painter can use it to restore them.

I don’t buy this one, for all intents and purposes, repainted persons are the exact same as the painted version, in example, repainted Sciel has knowledge that Maelle didn’t have about her past life.

There is yet another perspective on her ending here.

Since she basically enslaved Verso, its not so much a stretch.

When Verso sits at the Piano he basically freezes and refuses to play, but not sure what to do next.

The scene then focus's on Alicia and her canvas mask appears. (The same mask that shows on renoir & ailene in the real world when they're frozen at the canvas.)

He suddenly then plays. It can be assumed even further that she forced him to play using power we didn't know paintress's had.

We did know, because Clea did the same to her painted version, enslaving it and forcing it. Or painting over it, as they say in the game.

I guess the developers left it open so we can make our own judgements. I do think this is ultimately what would happen to Maelle in this world, just think, she loves Sciel, Lune and Gustave, now they cant gommage they will eventually die in that world because of old age, will she make them immortal like how Aline made her painted family immortal?

I honestly think she would, Alicia is living with so much guilt and pain from real Versos death, her family blaming her, her injuries from the fire, this painted world and those people in it is all she has. But whats scary is what else will she change and paint in that world the more she goes into madness? Gustave would not want this for her, id assume he would protest against her being in there, will she start manipulating him like she did Verso? just to stay in the painted world? its scary to think!

Yes but that's a little different than an "on the spot" command like Alicia gave. That's why I said it's not a stretch either.
