After finishing the game, you need to reload your last save and return to a flag. There you can start NG+. It's not really intuitive :)

Games like Elden Ring and the Dark Souls series does the exact thing where you have to start a new journey at the bonfire/expedition flag.

I wish I would knew it in advance xD wiped all my save data because of that :D well, more reasons to do one more run.
