Why the(Spoilers)
Gommage?

I am on my second playthrough and I still don't understand what the Gommage was supposed to accomplish.

Did Renoir set it up so he could get his wife out of the painting? Say Expedition 33 didn't stop the Paintress or Renoir, eventually the number would reach zero and be the extinction of anyone.

Which makes me wonder why Verso would want to stop it since he ends up doing what he wanted and that was the gommage of everyone.

I only understand that it was used to drive the plot along but not sure if it was ever explain.

Renoir is trying to snap his wife out of her massive depression and have her return to the real world instead of hiding in a fictional one. He thus tries to destroy her creations, starting with the older ones, but she fights back, which is why they're only getting gradually destroyed.

When the Paintress is defeated, it is revealed that she wasn't the one causing the gommage but rather trying to stop it. This results in all the humans being zapped out of existence except for the ones who're not painting-people or are special, like Verso.

Renoir wants to save Aline from the Canvas, as she refuses to leave, so he is killing her creations in hope to make her leave the Canvas

Okay that kind of makes sense. I am still piecing the lore together to try to make sense since the story is very complex.
