Woodcutters and storehouse workers will grab firewood regardless if there is space in their storage, but it might be a good idea to build a coal maker and have a worker turn firewood into coal.
Fir and birch trees don't grow back, they haven't implemented a regrowth (or whatever you want to call it) for the trees yet.
A good alternative would be the suggestion Fabraus makes, a marker for a forester. Though I'm not enamored with the forest of markers we already have to plant. But that's a different discussion.
I don't think automatic respawning trees would work well, mainly because many similar games have issues with trees (and other things) respawning inside player constructions. Using a marker or (tree) farm would minimize the complexity of regrowing code, as you don't have to account for players building at a respawn point.
