Generally, Firewood is collected by only Woodcutters. I am sure you already built Woodcutter's pit/hut/houses. In the menu of the building, Go to Tasks tab, and find Firewood. Set the priority to "None" You can even click the Firewood icon and uncheck the villagers, too. Then build one more Woodcutter's hut/pit, and hire a new woodcutter. Allow to collect Firewood there. Go to Whitelist tab of the building, and uncheck "Whitelist All Villagers". Then add only your coal-maker into Whitelist.
With these settings, no one is going to use Firewood except Coal Maker, and he/she will only use Firewood to produce Coal. Build a coal storage in the warehouse near the cooking house and/or village houses. They will use coal for heating and cooking. This is a very basic logistics setting. You can even use multiple warehouses to set more precise resource control too. Anyway, I am sure you understand the concept and have some ideas.
seems a bit dumb to have to jump thru all these hoops for something so simple, but firewood is being funneled into the charcoal spot, and the sticks to the crafters
the actual woodcutters are spending less time moving stuff around, focussing on the timber, while the gather grabs the sticks and fuel and runs back quickly (not carrying on shoulders means faster movement, and picked a villager with stamina for longer running.
so, while it is a little convoluted, it actually has other benefits too!
