As soon as they hit a building, your villagers assigned to the militia (through barracks, range, etc) will start to automatically attack anything attacking the buildings.
One thing I do is run around a building as something chases me, and as soon as I'm out of sight, they usually start attacking the building. This trick works best on enemy humanoids. The bear pretty much ignores buildings, and will endlessly chase me around the buildings.

And for them to help, your buildings HAVE TO take damage, which in itself is stupid and a waste of resources. Oh, and militia is limited by Eye level, which only goes so far, so don't expect to beat late-game raids only using militia cause there is not enough of them.
One would expect that Vikings, whose whole idea behind dying was to die in battle to get to Valhalla, would be trying to fight everything, not run like chickens.
A lot of that was propaganda from their enemies, much of which the vikings encouraged to increase their reputation. Meanwhile, the reality is that viking just didn't raid every single place they landed on... they sometimes set up shops and sold trade goods. They've found the evidence of trading posts filled with viking made combs and hairbrushes. Doesn't really fit the mythos... "Hey you there!, need a nice hairbrush for the missus??". It's kind of like the american indian plains warriors. For every guy riding a horse into battle, there were probably several back at camp that just made stuff for the rest of the tribe.

For early game blood moons i just put patrol markers around my entire camp north,east,south,west and make each patrol marker an unique patrol route.
Set the timer to wait to max.
Then when the Blood moon starts i quickly go to the barracks and assign the warriors to that specific marker.
My warrior always work at night, fairly important..
a lot of people dont know that bluetooth we all use is named after a viking named harold bluetooth. and u are right they didn't always raid. they were excellant craftmen with metal and carpentry and jewelers.

i normally do one minute each for patrol sector then the remaining time to train at the barracks or archery range only when i dont need help to stream roll the bosses that all ways near caves for me.
Horns can be a pain to get for the hunter hut press Q to sdee the tasks and put the horns on high, just make sure you haave a hunting maker where the smolkers are normally are like me they offen ear my iron ore from the cave storage wich is a annoying aswell for a workshop so can start making them
