For me it regrows as well. It probably comes back after an in-game year?
So I saw it regrow in one game, but in my current run it isn't, so I thought either I didn't see what I saw, or they removed it.
I imagine it's your villagers stealth gathering it.
Also remember to set thatch to a higher priority than other resources in the woodworker station.
It's the wood marker. You can tell by looking at your wood cutters task list.
