With regards to mining, I tend to just run in and smash the walls myself with iron pickaxe then let the stone cutter and or builders gather it. I smelt all the iron myself so I don't waste any.
The majority of stuff I let the villagers do though. One thing I did do was employ two cooks in the cookhouse. One working day shift and one night shift. Seems to have improved my output a good deal as my two uncooked food storage bins were full and not enough coming out the cookhouse
Thing is, take all the advice you can get and apply what works for you. If there was only one strict way of playing by doing a, b, and c in order then it would be boring.
Stone isn't too big of a deal because you get bunches from the Dranger guys, but nail pretty much replace rope, on the 3rd upgrade, so running out of iron is like running out of fiber. And logs and long sticks are needed to repair most buildings and walls when I get attacked.
I think their skill level has a lot to do with them wasting ore, my guy is level 100 and he does a really good job now, I also moved my coal maker to help him instead of following me around telling me he has no space, since he can produce coal faster then they use it
