If you don't have someone to sacrifice to keep skill levels, you can go ghost mode and then revive in your base to get all your loot dropped wherever you revive.
All my villagers are happy because for these people I invented nightshift.
Just invert work and sleep hours for nightshift and save it as a template then use the template on night owls.

I've also found that you need to pay attention to whether they have day/night affinities and assign their schedule as such. Anyone with a night affinity is on guard/watchtower duty overnight and everyone works no more than 8 hours in a day. I have managed to keep happiness 98+ with this and a good food supply.
build 3 wood totems around the base as only 3 villages can sit at each one, this increases their happiness, also giving them a cottage (which you can put 12 thatch beds + a fireplace) also increases happiness
whenever the sleep happens, they get 2 hours of leisure when they wake up, 6 hours work, 1 hour leisure, 5 hours work, 3 hours leisure, the rest is sleep, this allows them to always get water, food, and ideally sit at the totem for a little bit
it almost always says mood slightly decreasing even though they never drop below 90, this is also without any defenses
I typically cycle my villagers through the defensive buildings as their happiness drops. Also has the benefit of giving everyone some combat skill, though it still seems like villagers will get spooked and run if they're not explicitly assigned to a defensive building.
Some buildings add Happiness to the housing that surrounds them. The happiness provided by a housing building is divided by the amount of those residing within it.
Some want to work nights instead of days.

My work day schedule is 11 hours of work with 3 leisure hours either side and rest sleep.
See, the housing is probably my issue because I pack those longhouses like sardine cans. If anyone was wondering, You can fit 11 beds and a fireplace in one. lol
