I have played for a bit under 4 hours so far and based on what I experienced it seems to be very easy to stay both well fed and fully hydrated in this game. I don't think the re-work that the OP is asking for is needed at all.
Wells have a huge amount of water so once you can build a well getting water becomes a complete non-issue. Prior to that you can build rain catchers that hold 10 units each, are easy to build so you can plunk them down all over the place and they seem to replenish extremely fast. In both cases you can fill up your waterskin and that will last for quite a while before you need a refill. Before you can build those it's still not hard to find water if you take a few seconds to look for it. There's food all over the place that you can pick up and eat raw as well. I counted at least a dozen rocks that had mussels growing on them that were a very short distance from where I spawned when I first started playing and they respawn fast enough that you don't have to worry about food at all. Takes a few seconds to harvest and eat.
No need at all any rework. You build the rain collector, go near, press E to drink. Hold it to fill the bottle, done. For food you go to your Inventory and RMB on the food, done or add it to your quick bar. Very quick and fast.
About the tall grass.............. you just need to press Z to scan the land ........ I have no issues with it at all, quite loving it actually.
One thing I did was assign 1 villager to go collect food, mushroom, etc, to add it in the depository. Food problem solved. For water you just need rain LOL, come on.
