Generally speaking, if you're having trouble out-damaging the healers, you either need to (A) increase your overall damage output, (B) concentrate your fire to take down a single target quickly, and/or (C) disrupt their heals with status effects (mainly Carolina with heal block, but also Oana has heal reduction, Martina can delay heals with silence, Valeria (legendary) can block regen & shield with her curse, sometimes you can also use stun or charm)
You can up your damage by including more attackers in your party, using elemental counters (wind does extra damage to water), and by raising your party's overall elemental affinity (more characters of the same element = small boost to everyone). And, of course, by leveling up, ranking up, and upgrading your skills.
Niu-Wang's charge move makes your entire party attack the same target and can be helpful for finishing off an enemy.

An additional note of advice, they recently changed Gabrielle to do percentage based damage based off enemy health, in addition to her normal attack. So she is like Mary now. She is the highest dps on my team despite oleen and audrey having 2k more attack power than her. Her main attack now will always take 4% of their health, and her special will take 5% (both of them at lvl 6).
