I can't help with the field organisation though I'm afraid. Once one has the expanded vegtable patch, things get easier, but early on it's a challenge to fit everything you need in.
There are a number of very helpful guides in the 'Guides' section. This one in particular has good information about bees & honey production that should answer most if not all of your questions:

Especially in the early game. Put 4-6 beds of flowers (2-3 of each type), and you will get a pot of honey daily. Putting more beehives drastically slows down the process.
Oh, never look at the situation that way. I will try it! More space for crops and faster honey. Cause the 4 beehives with 8 flowers are pretty slow, need round about 6 days O_O
