How to change the weapon quick swap buttons (1-8)
Is there a listing on what weapon slot correlates to which weapon? I'd like to make the shotgun on button 2 instead of it being on 8, but I believe that there are more than just 8 weapons, so how are the weapon slots handled?

Press Tab (by default) to open the Map screen, switch to the "Weapons" tab at the top, and click on a weapon to change its position on the Quick Select/Weapon Select menu. The first "ring" in the Quick Select will show you which hotkeys correspond to which slots (e.g. 1 at the top, 2 at the top-right, 3 at the right, et cetera by default). So, for example, you can move the shotgun to slot 2 to change its hotkey.

Once you get more than 8 weapons and have more than one "ring", the second "ring" won't have any hotkeys. There are 4 extra "shortcut" keys that you can also use, though. They're bound to the arrow keys by default, but you can change them to F1-F4 or something else if you'd prefer.
To use the "shortcut" keys, hold middle-click (by default) to open the Quick Select menu, move the mouse to a weapon, and press a "shortcut" key to assign that weapon to that shortcut. Then you can press that key to use that weapon without using the Quick Select. This gives you up to 12 assignable weapon keys total (as long as "Settings" > "Mouse & Keyboard" > "Shortcut [1/2/3/4]" is set to "Weapon Quick Select").

Awesome! Thank you for the explanation!
