They made some changes for the PS5 remake, the "Part 1" version that weren't in the PS4 version of the game, and that's probably what you're seeing.

Joel and Ellie do look slightly older in the remake, probably because they reused the models from the sequel. Also the remake has more natural color tones, while the original was more saturated. I guess you could say that in the original Ellie looks more like 12 than 14, so the change kinda makes sense. That said, I'm also waiting for a mod that that changes the characters to how they looked in the original.

a lot of game devs put a disclaimer at the beginning of their games stating faces, places or other identifying features of something that may look like someone/something is coincidental as a result of this game. 'just look at the face' doesnt really hold up

It's not really a change, but adapting to be more human like and realistic. The original have a slight cartoon look to it with bigger eyes and puffier cheeks.

Same can be said about Joel. The new model is also looks slightly different because of the shift into more life like characters. Same type of changes applies to him as well.

Tess is, in fact, different altogether as the new model much closely resembles her actress.
