I seen from fanarts that 621 is actually human inside mech, like he would actually connected to it because his body is damaged
Yeah, 621 is a "strengthened human" (強化人間, read as "kyouka ningen") piloting the AC. Not all AC pilots are this though.
AC are more advanced version of that, instead of pre made robot they consist of armored core part where pilot, generator and most of electronics are placed that has multiple univeral conectors, allowing to to quickly be reconfigured for specific tasks. Hence name Armored Core.
While ACs are not inherently superior to other types of robots what makes em especial is versitility (in universe part replacement time is barely longer then what you spend in menus), that is why they are so popular among mercenaries.
