daemon x machina (if dont mind anime story)
gundam breaker 3 (on sony playstation, dont play sequel from pc)
m.a.v. (not on steam, and still work in progress, but playable)
project nimbus or strike suit zero (if you want to fly as airplane)
zone of enders 2 (still can be hard though)
It's mechs do not fly or run, they're more like tanks.
There's MASS Builder which has great customization, but the gameplay is kind of atrocious.
Mechwarrior is... okay-ish? It's really clunky in places, and much slower paced.
Then there's Daemon x Machina, very anime-like, I always felt the combat is super floaty, nothing feels like it has any weight to it, and missions are super generic. Also characters talk way too much over the gameplay, they never shut up.
Unfortunately nothing else the mech genre is as polished as this game, mechs are always been a niche. Here's hoping AC6's massive success will show devs that mech games are a worthwile investment.

Front Mission 1-> Scars of War, same mech customization but TBS.
Battletech and Mech Commander 1+2, again, cannot customize mech much but TBS and RTS.
Now we wait for this.
I would encourage you to keep going though if you are not hard stuck, I kind of feel the same way about the early bosses, not all that satisfying to beat, but either they started to get more satisfying or I just became more accustomed to the gameplay or something happened because I got more and more into them the further I went, Ibis was SUPER satisfying to kill which is where I just passed now. I know there are even more cancer ones coming so we'll see how those go.
(It nearly won Kusoge of the Year 2018...)
Customization options reminded me of Chromehounds in a way how weird you can do it.
