Edit: How could I forget the Front Mission games. Front Mission 4 is still one of my favorites, and Left Alive is one the biggest disappointments ever.

Carnage Heart is pretty unique (recommended if you liked Formula Front or training AI in SL or VD).
Also Virtual On and Gundam Extreme VS, if arena fightings count.
Also don't forget Sandlot titles like Robot Alchemic Drive and Earth Defense Force.
I was incredible lucky to find a copy of GG Blaze for the PS2 was back in the day. Didn't understand much about the story or the background, but it was just incredibly fun grinding a mission in an effort to hit a new point plateau or unlock some special bonus.
This is less of a mech game and more of a regular shooter that just has mechs in it IMO
I recommend you to check out this doujin / fangame, if you havent already. Though its closer to GG1-2 from Saturn rather than later sequels.

Quite a few where the mechs aren't the central focus, but are playable to some capacity like in the Xeno series (Xenogears, Xenosaga 1-3, and Xenoblade X) or the Legend of Heroes: Trails of Cold Steel games.
Haven't played that one in a while tho.
SLAI was on PS2 meanwhile Xbox had Phantom Crash. I forgot how do they relate to each other.
Oh, I forgot about Armored Warriors / Powered Gears. Amazing mecha beatemup. Cyberbots is fighting that shares characters/setting with it.

Its a neat little Indie game, good fun for a few hours. Its fairly simple, but its very fun!
