30FPS lock with Vsync, MUCH worse for me.

ONLY way I can get the FPS to unlock to 120 is by using Enhanced sync, which is silly.

As my 7900XTX CLEARLY handles the 120FPS easy.

If you guys have a 120 Hz display why are you not using G Sync/Freesync instead?

Did you try switching between Fullscreen and Borderless Windowed? Previous Fromsoft games had bad fullscreen implementation.

Check if your monitor is freesync compatible and if so check if there is an option to decrease ghosting from motion, its called OD or Overdrive on Asus monitors. Odd that a freesync monitor forces a cap below the monitor's refresh rate
