Yes, there's an item for your stats: the shark egg. These are limited.
For the skills, just talk to the moon snail and you can re-distribute skill points. No limits.

In terms of Stats: i suggest stacking attack/magic for offensive power, if you lack health even with the tentacles you may found, go for some vitality points. Resistance may be a good choice if you want to totally avoid poison/bleach/corrosion status effects.

I have like 20/5/25/5 or something like that and I feel I have too much health with every tentacle upgrade (around 55 vitality total), but I'm kinda good at these games.

In terms of abilities you buy... Well, all the defensive ones are a MUST imo. After that, the ones on the top branch, are fun too, using the hooks against enemies.

Try out whatever feel like using!
For my playthrough, I pretty much went with every playstyle one after the other.
Try using a hammer build once you unlock the ability, go unga bunga mode for a little while, see if you like it.

If not, then go with a full umami build with shell attack increasing stowaways, and use the party hat, or the party popper for actually insane damage.

Though I'm more of a mage player, having experience with Dark Souls 1 magic felt too strong at times and didn't feel like the 'intended' way to experience game's mechanics fully, so in Another Crab's Treasure I decided to go melee. 3 levels = 2 attack + 1 vitality (imho, bigger health bar is very strong in souls-like games and gives some room for mistakes). Also seems that the stats are capped at 30 points - couldn't invest more into attack past that. Still used spells during boss fights whenever I had mana/umami.
