As far as best spots to harvest souls, the pools is usually a good place to warp back to, usually the fish respawn there pretty quick and the nearby areas. also use skills that balance out your soul loss a bit ( flip etc ), these should be your go to rather than using hit as they are souls positive, yell and one of these you can leave a fight up on souls. There is a few pools in the downwood that are pretty loaded with fish also. One other way you can get easy souls is playing whatever, depending on the opponent difficulty 30-100 souls per win.
I would recommend using potions if you can, its the easiest way to cheese the whole late game on row 1-2 skills, especially the damage reduction potion, and the heal potion, get the portable cauldron from Ratty's dad so you can mix it anywhere. Stun locking the more powerful enemies if you can is your friend also, but really downwood on row 2 skills is going to be a hard slog.
There are a few semi hidden potions around that are in the SS and bonehouses, warp back to the bridge and take a look around once the bridge gets rebuilt (near the area where the rat guard stood), there is a decently powerful easy to get potion in there that does 3 damage also, might require some Payn translating whistle ...
