Invert mouse setting is not supported in the demo.
the only UE game i know that looks good and runs stable is Remnant from the Ahes.
Rest is either stuttering and/or low fps or has laughable comic grafics.
And yes my PC is old but UE really scales terrible, i think the worst from all engines i know
Not sure what you mean by getting stuck, if you can detail on that it'll be great.
And yes, I recommend that you wait and check out the new demo once it's out, it will improve on all of the things you've mentioned!

Downloaded the game last night. Ive been having similar problems.
Once trees are chopped, its still possible to be blocked by the tree, even though it's not there. Upon building the door frame, i found the character was too tall (or wide) to fit through, making them useless. So far ive been unable to use stairs as an entrance to any building, as they refuse to snap to the outside of the "door" It seems like theyll only snap into place from the bottom, which isn't ideal.
The second time I started the game, the FPS was much smoother.
