can't find thistle or quartz

I was planning on going as far as I could without help, but I cannot find these two things for the LIFE of me, what areas can I find them ? (simple general directions work too)

Quartz can be found on level 10 or lower in the first Mine (accessed through the Mole Cave; entrance is in town, gray stone building with log roof)
Thistle is a plant that grows randomly throughout the world, it looks like a dark blue poof on a green stem

Easiest thistle is the tutorial intro!
There's two 2-star Thistle just before the area where you're supposed to catch a mouse for Coco. Grab them and keep 'em, I recommend you save up for the seed recipe later, and plant them then if you're willing to wait.
Otherwise, just search around the world, herbs do not have a set spawn rate in this game like the first, it's set when you start up the world and is individual each playthrough. Just look around the map and memorize where you find them when ya do.
