Call a horse for early stages, later on you'll obtain an item that increases your speed and will level up a lot.
All characters can level up up to 100, after that you can promote them which resets their level but you get to obtain things that you can use to further increase your stats, speed being one of them.
If you're talking about attack speed, weapon fusion is your place to go, there's a perk you can equip that increases the attack speed.
When do you get xu shu? I maybe am just missing him, what family is he in?
His special move is the broken part, it summons projectiles that fall on enemies for a while and it's spammable.
Last question if you see it, is there any way to kind of know what star difficulty is "equal" to the level I should be around to not get destroyed? Or just some way to know around what level to be around throughout chapters.
If this is your first Warriors game, seriously, just play whoever you think looks cool. You really, really, REALLY do not need to only play the most powerful character in games like these. I've been playing this series for so much of my life and even in my earliest experiences with the series, this rule still remained true.
For learning, stick to Normal, though if that's too hard right away since it might take you a minute to get used to things, which is perfectly fine if that happens, go to Easy, and then raise the difficulty any time you start feeling like you're styling on your current difficulty with extremely fast kills of enemy officers, etc. If it doesn't work out on that higher difficulty, revert to the previous difficulty, get some upgrades, etc.!

You will unlock people as you go through the story. Just play and check everyone who interests you out! Mowing down hundreds as your favorite character(s) is the whole selling point!
