Report a translation problem
For all we know, they may have changed the face this time for allow for more expressive animations so that Max actually reacts appropriately to something happening. A lot of the more serious moments in LiS were undercut by the stiff animations that made it difficult to take the characters seriously. It's only because of their VAs acting that I could treat them as genuinely upset. And the tears flowing down their face.
I'm 28 (same age as Max then) I do look the same... though I'm more zombified and tired on work days than when it was just school time. So yeah, tired eyes wins
The new engine just makes it hard to see them because the current videos and photos don't really focus on them. My guess is, they wanted to make her look older, and to that extent, elongated her face a bit as well because she's supposed to be an adult photography teacher at this point, so you don't want people thinking she's still a teenager. I mean, Safi seems to have some wrinkles around her mouth and forehead, to indicate aging, so they're obviously going all in on the characters being full-on adults, to completely separate them from any notion of still being a kid. In fact, this Reddit post shows how much of a difference those bangs make in terms of her looks:

Why? Because collagen production typically begins to decline in a person’s mid-20s and can result in the skin becoming less firm and prone to sagging. Health and diet also play a big part. I think the big thing throwing people are her hair change though. They needed to update her model regardless, if they did nothing she'd just look the same like she never aged and that would be more unrealistic.
Anyway Max looks amazing and very pretty, shes aged very well.
Its been ages since I last lurked in the LiS subreddit, but that post really shows that her current model is not as different as some folks fear it is.
you have to either be blind or have bad memory if you think that looks anything like max.
I feel like it looks better in motion compared to being static.
