How do I fight dwarf cannons?
I am doing the regular campaign as elves. My first campaign was infantry-focused, went well, and ended in an elite battle against dwarves. One cannon wiped out four of my units.

The second campaign with elves was ranged and chariot-focused. Again, all went well; again, a dwarf cannon wiped out my army.

How do I do this?

Bolt throwers. You can also try and use terrain and enemy units to block the cannon's line of sight but this is a bit buggy.

Sadly the answer to artillery is artillery. And the answer to every other type of unit is artillery. So... get some artillery

For elves at least key in my playthroughs to deal with cannons has been one or more of the following.
Great Eagles = If you get them at the start, you get two., so even if one gets shot out of the skies, you are still good.
Cavalry = not as fast as great eagles, but fast enough most of the time, but alot more durable than the great eagles.
hero on a mount specced for combat = Honestly found this to be the strongest solution, speed of a great eagle, damage of a small unit of swordmasters and way tougher than either cavalry or great eagles.

that's what I used chariots for, mostly to tie them up since they cant do anything decent after the charge phase.
