The 2 add some class, change some skills. I find it a little harder
The 3 add a lot of things, maybe too much to focus
If you plan on playing them all, start with one. It's the more archaic of the games and it's hard going backwards.
So which part is best boils down to personal opinions and most people you ask who played those games will have different opinions about that. For me best is EO4 but its sadly not out on steam, can only hope they release it. Out of those 3 that are out on steam i would say i go for 1 since i only played 2nd game for around 10 hours and never got the chance to play the 3rd one.
Edit. Found the numbers, in EO4 patch up was healing by flat numbers and level 1 was healing for 10 points.
3 is the point where they tried to do an actual story, added an overworld to explore, and started to play with Sub-classes.
